      • Notes: The meat mixtures were vacuum-packed in plastic bags and frozen (for a maximum of 1 wk) until the day of frying. One 100g patty was fried for 3 mins at 356°F in a double-sided fryer. Original creatine content of the sample is 129 µmol/g dry matter. “Dry matter” means they took all the water out and the food is completely dried. And so, we converted the mean data to g/100g of food for it to be coveniently available and easily be referred to by people who are cooking at home. Dry matter is 51%. With these on hand, we converted the original data and came up with a creatine measurement in g/100g of food.
