    Do you mean the acetic acid found in vinegar specifically, or do you think other acids like citric acid or lactic acid would work equally well? [In practical terms the question is, would lemon juice work similarly well as vinegar? Likewise, would a true sourdough bread, whose leavening process predominantly involves lactofermentation, have a lower glycemic impact than a modern bread made with commercial yeast instead of a sourdough starter?]
